As we embark on this new year, I'm beginning with a forecast—a prediction I anticipate unfolding in the later months of 2024.

From the beloved bubble tea to flavorful baos, Taiwanese culinary delights have traversed the globe, finding their place in diverse corners of the world. Despite this widespread presence, Taiwanese cuisine frequently gets categorized within the expansive realm of Chinese culinary traditions. Occasionally, it's even mistaken for Thai cuisine.

Taiwanese gastronomy boasts an array of unique flavors and cooking techniques that deserve distinct recognition. While its roots may intertwine with Chinese cuisine, it has evolved into a rich tapestry of its own, blending influences from various cultures and regions. This culinary fusion gives rise to dishes that stand apart, offering a vibrant blend of flavors, textures, and cultural heritage that sets Taiwanese cuisine apart from its neighboring counterparts.

Boba originates from tapioca starch, also known as cassava starch, forming the beloved 'tapioca pearls.' These pearls undergo a cooking process in a syrup typically made with brown sugar, resulting in their characteristic sweet flavor and dark hue. While commonly found in milk tea, these pearls are remarkably versatile and can complement a wide range of beverages.

However, boba's appeal extends beyond just being a drink ingredient. Consider the innovative creation of boba milk tea cookies.
