Good afternoon! Happy Wednesday! Unfortunately, this is a late newsletter, but it will be good despite that! I recently made Chocolate Ginger Cookies and am pleased to share this recipe with you! If you end up making it, please let me know your thoughts!
I hope you are having a good week. This one is quick, easy, and comforting, given the weather we are experiencing! Happy fall!

dry ingredients ingredients
one and a half cups plus one tablespoon of flour
one and a quarter teaspoons of ground ginger
one teaspoon of cinnamon
a quarter teaspoon of ground clove
a quarter teaspoon of ground nutmeg
one tablespoon of cocoa powder
a teaspoon of salt
stir your dry ingredient mixture together
in a stand mixer (or if using a hand mixer), place in your bowl
eight tablespoons of unsalted butter
grate one tablespoon of fresh ginger into that same bowl
one teaspoon of vanilla paste
whip your butter-ginger mixture together for around 4 minutes, then add
half a cup of brown sugar to the bowl and mix it
add a quarter cup of molasses
in a separate bowl, add a teaspoon of baking powder and one and a half teaspoons of boiling water and dissolve the baking powder
add half of your flour mixture to your butter mixture, then add in your baking soda mixture & add in the rest of your flour.
add half a bag of chocolate chips if desired, and mix it for a minute to incorporate the chips into the dough.
place your dough in tupperware or saran wrap to chill in the fridge for two or more hours.
once your cookies have chilled for at least two hours, preheat your oven to 325.
put some sugar into a small bowl because you will roll the cookies in the sugar before placing them on the tray.
bake the cookies for 13 to 15 minutes in the oven.
